Rhubarb syrup

Ingredients
- 2 cups diced rhubarb
- 2 cups water
- 1 cup granulated sugar
Instructions
Add the water and rhubarb to a large saucepan and bring to a boil over medium-high heat. Reduce heat and simmer for 7 minutes or until the rhubarb is softened and stringy. Strain the rhubarb using a cheesecloth or strainer. Discard solids. Place liquid back into a clean kettle, add sugar. Bring to a simmer & reduce till desired consistency. I let mine simmer for about 30-45 minutes. Cool and refrigerate syrup.
