Macaroni Salad
Summary
Classic macaroni salad with elbow noodles, chopped veggies, hard-boiled eggs, and a creamy mayo-mustard dressing. A perfect chilled side for picnics or gatherings.
Ingredients
- 2 cups elbow macaroni noodles uncooked
- 1 small sweet onion chopped
- 2 stalks celery chopped
- 1 green pepper chopped
- 1⁄4 cup carrot grated
- 3⁄4 tsp. salt
- 1⁄4 tsp. ground black pepper
- 1⁄2 cup mayonnaise
- 1 Tbsp. apple cider vinegar
- 1⁄8 cup granulated sugar
- 1 Tbsp. yellow mustard
- 4 hard boiled eggs chopped
Instructions
- Cook and drain the noodles
- Let Cool
- In a large bowl, combine everything and mix well cover and refrigerate for a couple of hours or overnight
