Macaroni Salad

Summary

Classic macaroni salad with elbow noodles, chopped veggies, hard-boiled eggs, and a creamy mayo-mustard dressing. A perfect chilled side for picnics or gatherings.

Ingredients

  • 2 cups elbow macaroni noodles uncooked
  • 1 small sweet onion chopped
  • 2 stalks celery chopped
  • 1 green pepper chopped
  • 1⁄4 cup carrot grated
  • 3⁄4 tsp. salt
  • 1⁄4 tsp. ground black pepper
  • 1⁄2 cup mayonnaise
  • 1 Tbsp. apple cider vinegar
  • 1⁄8 cup granulated sugar
  • 1 Tbsp. yellow mustard
  • 4 hard boiled eggs chopped

Instructions

  • Cook and drain the noodles
  • Let Cool
  • In a large bowl, combine everything and mix well cover and refrigerate for a couple of hours or overnight
