Honey Wheat Bread

Ingredients
- 2 cups warm water 2 TBSP yeast
- 1 egg
- 1⁄3 cup brown sugar
- 1⁄3 cup oil
- 1⁄4 cup honey
- 3⁄4 cup mashed potatoes
- 2 tsp salt
- 1 1⁄2 cup whole wheat flour
- Approximately 4 to 5 cups bread/all purpose flour
Instructions
- In the bowl of a stand mixer, combine the warm water, yeast, egg, sugar, oil, honey, mashed potatoes and salt. Add the whole wheat flour and mix it into the liquids using the beater blade attachment, just until the flour is moistened.
- Next, add 3 cups of bread/AP flour. Beat. Switch to dough hook attachment and gradually add in more flour.
- Either turn out dough on a lightly floured surface and knead with your hands for 5-8 minutes, or keep in the mixer and knead on medium speed for 4-5 minutes. Knead until the dough is smooth, elastic and not very sticky.
- Transfer the dough to a greased bowl, cover the bowl with plastic wrap, and allow the dough to rise until doubled in size.
- Punch dough down gently and divide into 3-4 portions. Spray counter top with cooking spray, and with a rolling pin, roll each portion of dough into a long rectangle. Roll the dough up, starting at the short edge. Repeat with remaining dough.
- Place the dough, seam side down, into greased bread pans.
- Cover the dough and let rise in a warm place until doubled, or until dough has risen 1 inch above pans. Gently remove the covering.
- Bake at 325°F convection oven for approximately 30 minutes.
- Remove from the oven and invert the loaves onto a wire cooling rack.
- Brush the tops with butter and allow to cool.
