French Onion Soup

Ingredients

  • 9 Ib onions cut in half and sliced thick 3 tbs butter
  • 6 qts beef broth
  • 1.5 cup red wine
  • 2 tsp dried thyme
  • 2 tsp dried parsley
  • 1 tsp black pepper
  • beef soup base (optional if needed)

Instructions

  • In one large pan add butter and onions. Sweat the onions over low heat and set aside.
  • In large stock pot add all other ingredients. Bring to boil and simmer 20 minutes. Taste to see if you need beef base. I ended up adding 2 heaping tbs.
  • Prepare your jars. I ended up with 6 quarts and 5 pints.
  • Using a slotted spoon fill your jars about half full with the onions. Dump the onion "milk"/butter leftover into the pan with the soup liquid. Bring it back to a boil for a couple minutes.
  • Pour soup liquid over onions in jars to 1" headspace.
  • Wipe the top of your jars with a vinegar soaked paper towel to remove any residue. place lids and rings on jars. place in canner/s and process 40 minutes both quarts and pints.
