Aunt Betty’s Banana Bread

Ingredients
- 1 3⁄4 c. flour
- 1 1⁄2 c. sugar
- 1 tsp. baking soda
- 1⁄2 tsp. salt
- 1 tsp. vanilla
- 2 eggs
- 2 ripe (medium) bananas, mashed (1 c.)
- 1⁄2 c. vegetable oil
- 1⁄4 c. plus 1 Tbsp. buttermilk
- 1 c. chopped walnuts
Instructions
In a large bowl, stir together flour, sugar, baking soda and salt.
In another mixing bowl, combine eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts. Pour into 9 x 5 x 3-inch baking pan. Bake at 325° for 1 hour and 20 minutes or until bread tests done. Cool on wire rack. Yields 1 loaf.
